Who else has memories of the McCain Deep’n Delicious cake being the best thing ever? Sorry to break your heart, but it’s not actually that good. It’s sickly sweet and doesn’t really taste like chocolate. This version combines my go-to one-bowl chocolate cake with my favourite not-too-sweet chocolate buttercream made with cream cheese (drool).

This is the chocolate cake of my dreams.

Dupe'n Delicious - One Bowl Chocolate Cake

Ingredients

For the cake
  • 1 cup all purpose flour
  • 1 cup white sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 1/2 tsp vanilla
  • 1 tsp white vinegar
  • 1/3 c hot coffee
For the frosting
  • 1/2 cup cream cheese, room temperature
  • 1/2 cup salted butter, room temperature
  • 1 cup icing sugar, sifted
  • 3 Tbsp cocoa powder, sifted
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 350. Line a 9x9" baking pan with parchment paper. Set aside.
  2. In a large bowl, combine sugar, cocoa, baking soda and powder, salt, egg, milk, oil and vanilla. Whisk until thoroughly combined. You can not over mix at this stage. 
  3. Sift in flour and fold until mostly combined, try not to over mix once your flour is added. Pour in hot coffee and vinegar, and whisk quickly to combine until smooth. Pour batter into cake pan and bake for 30-35 minutes or when a toothpick comes out clean. 
  4. To make icing, beat butter and cream cheese with a hand mixer on high until light and fluffy about 4 minutes, scrapping down the bowl down at least once. Add in sifted icing sugar, cocoa powder and vanilla, and beat for another minute. Put in a piping bag with a star tip and pipe over cake once cooled, or dollop on and smooth over with the back of a spoon.
