Garlic Scape Salt
You’ve made garlic scape pesto, garlic scape butter, put them in everything—now you’re sick of them. Salt is the last step in my garlic scape preservation journey each year, and it’s so underrated. It makes an excellent little gift, and your house will have never smelled better.

Garlic Scape Salt
Ingredients
- 2 cups chopped garlic scapes (into 1 inch pieces), cleaned
- 1 cup salt
Instructions
- Pre-heat oven to 200°F
- Add garlic scapes to a food processor and pulse until they are minced, scraping down as needed.
- Add salt, and continue processing until the mixture is homogeneous and paste-like.
- Spread the mixture on a parchment-lined baking sheet, and bake for 60-90 minutes until the salt feels dry, moving the mixture around ever 20 minutes or so.
- Allow the salt to cool completely, and make sure it feels dry and not cool at all. If there is still moisture, bake again for 30 minutes. If the salt has created clumps, pulse it in the food processor again.
- Store in airtight containers and use within 6 months for the best flavour.
