Umami Roasted Cherry Tomatoes
This is my favourite way to use cherry tomatoes to bring out all the more-ish flavours. I also love to pop a batch of these into a plastic bag to freeze for later in the winter when you want a taste of summer. Delicious in quiche, sandwiches, focaccia, pasta, hummus, and beyond.

Umami Roasted Cherry Tomatoes
Ingredients
- 1 lb cherry tomatoes, halved
- 1 Tbsp olive oil
- ½ Tbsp balsamic vinegar
- ½ Tbsp molasses
- ¼ tsp fine salt
Instructions
- Preheat the oven to 350 and line a baking sheet with parchment paper, ideally the parchment is larger than the baking sheet so no juices will escape from the surface.
- Toss the cherry tomatoes in all of the ingredients, and arrange in an even layer.
- Roast for 45-60 minutes, until the juices have thickened into a syrup consistency.
