Umami Roasted Cherry Tomatoes

 

This is my favourite way to use cherry tomatoes to bring out all the more-ish flavours. I also love to pop a batch of these into a plastic bag to freeze for later in the winter when you want a taste of summer. Delicious in quiche, sandwiches, focaccia, pasta, hummus, and beyond.

Umami Roasted Cherry Tomatoes

Ingredients

  • 1 lb cherry tomatoes, halved
  • 1 Tbsp olive oil
  • ½ Tbsp balsamic vinegar
  • ½ Tbsp molasses
  • ¼ tsp fine salt

Instructions

  1. Preheat the oven to 350 and line a baking sheet with parchment paper, ideally the parchment is larger than the baking sheet so no juices will escape from the surface.
  2. Toss the cherry tomatoes in all of the ingredients, and arrange in an even layer.
  3. Roast for 45-60 minutes, until the juices have thickened into a syrup consistency.
