Garlic Scape Pizza Dough

Ingredients

  • 1 1/2 - 2 cup all purpose flour, plus extra for dusting
  • 3/4 cup warm water, divided
  • ½ cup chopped garlic scapes (in 1 inch pieces)
  • 1 ½ tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt

Instructions

  1. Bloom yeast in your mixing bowl by adding ¼ cup warm water, sugar and yeast. Mix and set aside.
  2. Blend ½ cup water and garlic scapes in a blender until smooth. Set aside 1 Tbsp of mixture for your donair sauce.
  3. Add remainder of the mixture into the bowl with 1 ½ cup of flour and salt. Mix with your hands until a dough forms. If it’s too sticky, add more flour. Once combined, turn out onto a floured surface and knead for 5-7 minutes until smooth like a baby's bottom.
  4. Put in a lightly oiled bowl, cover and put in a warm place for 60-90 minutes or until doubled in size. I like to keep mine in the oven with the light on.
  5. Once the dough is fully proofed, preheat oven to 450. Gently turn out dough onto a lightly floured surface and gently stretch out to a large circle, about 12"x12". Oil or flour your hands to prevent sticking. Transfer to a parchment paper lined baking sheet or a pizza pan sprinkled with cornmeal.
  6. Add your pizza toppings and bake in a 450 oven for 12-14 minutes.
